Spinach and Feta Stuffed Mushrooms

I used my high speed blender to blend together the mushroom powder, organic 100% sheep's milk feta, plant based cream, plant based pourable mozzarella, garlic, salt, organic spinach, and the mushroom stems. I only pulsed this all together on low speed, making sure to scrape down the sides of my blender as I went. I used organic baby bella mushrooms to hold the filling. You can adjust this recipe for any quantity of mushrooms.



  • 6-8 organic baby bella mushrooms, stems removed and saved for blender

  • 1/2 c. organic 100% sheep's milk feta, crumbled

  • 1/2 c. organic spinach

  • 1 scoop of mushroom powder blend

  • 1 tsp. organic minced garlic

  • 1/4 c. plant based creamer

  • 2 tbl. Miyoko's Pourable Plant Based Mozzarella

  • Dash of salt


  • Preheat oven to 400 degrees.

  • Line a baking sheet with parchment paper.

  • Place all ingredients, except whole mushrooms, into blender or food processor and begin pulsing on low speed until just blended together. Be sure to scrape down sides intermittently. Pulse until desired consistency.

  • Scoop filling into each mushroom

  • Top each filled mushroom with a small amount of feta cheese crumbles.

  • Bake in 400 degree oven for 18-20 minutes or until mushrooms become tender

  • Enjoy!
